This time, we will introduce some recommended lunch restaurants in Daimyo, Chuo-ku, Fukuoka City.
Open only at lunchtime, three days a week! "DAIMYO Butambushi" (Daimyo, Chuo Ward, Fukuoka City)
DAIMYO Butambushi opened on July 8, 2023, a 3-minute walk from Akasaka Station on the Subway Airport Line.
The restaurant rents space from the izakaya restaurant "Ginrin, a Fisheries Wholesaler's Direct Sales Bar" and is open only during lunchtime three days a week on Mondays, Fridays, and Saturdays.
*From November 2023, the store will be open on Sundays as well.
The restaurant has counter seats and raised table seats.
A new genre that combines braised pork and hitsumabushi! Try "Butamabushi"
Here you can enjoy "DAIMYO Buta Mabushi" (1,500 yen), with only 30 meals available per day.
By the way, do you know what kind of dish "Butamubushi" is?
If you thought it sounded similar to the Nagoya specialty, you'd be correct. It's a pork version of "Hitsumabushi," which you've never heard of before. What's served on top of the rice is not grilled eel, but braised pork!
The set that came out looked like some kind of science lab equipment.
There's no need to worry about how to eat it, as the staff will explain it to you in detail.
Basically, just like Hitsumabushi, it can be enjoyed in three different ways: 1. Eat it as is, 2. Add condiments to change the flavor, or 3. Pour dashi over it to make dashi chazuke.
First, I'll eat it as it is.
The thick, sweet sauce and tender braised pork cubes are delicious on their own. They take two days to simmer for 2-3 hours to complete.
It seems like if you mash the egg yolk and mix it, you could eat as much rice as you want...but I held back and moved on to the next step.
Next, add the condiments. I've tried them all and I recommend them all!
The small plate contains three types of food: homemade edible chili oil, mixed condiments, and lemon-pickled Chinese cabbage.
The chili oil was mildly spicy and rich, a perfect match for the sweet sauce of the stewed pork. The mixed condiments had a very refreshing scent of perilla and myoga.
The test tubes contain three types of ingredients: bubuarare, sansho pepper, and shichimi pepper.
My favorite was the Japanese pepper; just one sprinkle gave the braised pork a flavor similar to grilled eel.
And to finish off, we have dashi chazuke.
When the kelp stock in the carefully selected Nanbu ironware is poured into a funnel containing bonito flakes, the fragrant "golden stock for ochazuke" is gradually produced.
It's fun to extract it yourself!
Pour it over rice while it's still hot and eat it all in one go - you're sure to be satisfied! We also recommend adding some test-tube bubu arare.
