Low-fat and great for dieting! Two delicious "steamed fish" recipes that are "easy and fluffy"

In preparation for my health check at the end of the year, I'm on a low-fat diet.
When you do this kind of work, there are situations where you end up eating more than you need, so it's difficult to control (that's my excuse).
It's time to face reality! So this time I'm going on a lipid-controlled diet with the help of a professional (I'm pretty serious about it).
So, the best cooking method to use as little oil as possible is "steamed dishes"! I'll introduce you to a low-fat "steamed fish dish" that you can make even on days when you don't feel like doing anything.
It's a pain to get a steamer out, or you don't even have one... I know you may be thinking that, but there are many different types available now, so why not try looking for one that fits your lifestyle? It's super convenient to have one.
1: No seasoning needed! Just layer and steam "Steamed Salted Salmon with Vegetables"
Just grilling salted salmon can get boring, and cleaning the fish grill is a bit of a hassle...In those cases, why not try steaming it with some leftover vegetables in your fridge (onions, bean sprouts, pea sprouts, anything!)?
It's so easy to make that you might wonder if it can even be called a dish, and it's also healthy and high in protein.
Another great thing about steamed food is that you can make miso soup or do other things while it's steaming. By the way, I use salted salmon, which is a gift in return for my hometown tax donation.
[Ingredients] (Serves 2)
Salted salmon・・・2 pieces
Cabbage...appropriate amount
Mushrooms (your favorite)...about 50g
White onion・・・10cm
Sake・・・1 tablespoon
Citrus fruits (kabosu, sudachi, etc.) - appropriate amount
Ponzu sauce (optional)・・・appropriate amount
<How to make>
(1) Cut the cabbage into roughly thin strips. Remove the stems from the mushrooms and cut or loosen them into bite-sized pieces. Slice the green onions diagonally.
(2) Place (1) in a heat-resistant container (a larger amount is fine as the volume will reduce), place the salted salmon on top, and sprinkle with sake.
(3) Steam the vegetables in a steamer for about 10 minutes until they reduce in volume.
(4) Garnish with citrus fruit and add ponzu sauce to taste.
2: A mysterious and elaborate taste! "Steamed white fish with black beans"
"Touchi" is a Chinese fermented food made by adding salt, koji, yeast, etc. to black soybeans or soybeans and fermenting them. Just by chopping it finely and adding it, it adds richness and flavor, and turns protein-rich white fish into a feast. It will have a high-class Chinese cuisine feel. It goes well with aromatic vegetables.
[Ingredients] (Serves 2)
White fish (sea bream, cod, etc.)...350g *With head. If filleted, about 2 pieces (200g)
Soybean paste・・・5g
White onion・・・10cm
Ginger...about 5 slices
Coriander... appropriate amount
Shaoxing wine (or sake if not available) ... 1 tablespoon
Soy sauce...1 teaspoon
Sesame oil...1 teaspoon
<How to make>
(1) Sprinkle salt (not included in the recipe) on the white fish and let it sit for about 10 minutes (I used a small red sea bream this time. I cut it in half, head and tail, with a knife cut down the middle). Wipe off any excess moisture with paper towels.
(2) Thinly slice the white onion into rings and soak in water. Cut the ginger into rings. Finely chop the black fermented black beans with a knife. Cut the coriander leaves and stems into bite-sized pieces. If there is a root, wash it thoroughly and mash it with a knife.
(3) Place the ginger and coriander root in a heat-resistant container, then place the fish on top, sprinkle with Shaoxing wine and soy sauce, and sprinkle with fermented black beans.
(4) Steam in a steamer for about 8 to 10 minutes.
(5) Turn off the heat, drizzle sesame oil, and top with white onions and coriander.
Of course, you can use fillets of fish, but using a whole fish will make it feel even more like a feast.
You can also finely chop fermented black beans and add them to mapo tofu or stir-fries. They will add a delicious flavor that only fermented foods can provide.
