Easy to make and looks luxurious! Two easy and delicious meat recipes that are perfect for home parties: "Just boil or grill"
Hello. I am Ayumi Nakaganji, a chef.
Speaking of October, Halloween comes to mind. I spend every year celebrating it without really understanding what the festival is, but I'm sure there are many people out there who are planning a party for it.
After Halloween, there are plenty of events that bring together people, such as Christmas and year-end parties.
Here we will introduce two meat dishes that are perfect for home parties and look luxurious just by boiling or grilling them.
1. "Grilled Salted Pork with Herbs" is a luxurious dish that can be prepared simply by marinating and grilling.
After marinating, just bake it in the oven!
It's not a hassle, but the luxuriousness of the chunk of meat makes it perfect for entertaining guests.
You can eat it as is, cut it into thick slices like pork steaks, or cut it thinly and make a salad with plenty of vegetables.
Ingredients (Serves 4)
Pork shoulder loin chunk・・・500g
Lotus root・・・100g
Garlic...1 clove
Salt: 1.1% of meat weight
Black pepper...1/2 tablespoon
A Olive oil...2 tablespoons
A Thyme, rosemary (dried or fresh) - appropriate amount
A. Laurel leaf...2 pieces
Balsamic sauce (commercially available) - appropriate amount if available
<How to make>
(1) Wipe the pork with kitchen paper and pierce it about 10 times with a fork. Rub salt and black pepper all over. Wash the lotus root thoroughly, and if the skin is thin, cut it into large chunks.
(2) Place (1), A, and the sliced garlic in a ziplock bag. Remove the air and store in the refrigerator for 2 hours to 2 days (2 days is recommended).
(3) Before baking, remove from the refrigerator and allow to return to room temperature (about 2 hours).
(4) Place the pork, herbs, and garlic on a baking tray and drizzle with olive oil (not included in the recipe). Place in a preheated 180° oven and bake for about 50 minutes. When there are about 30 minutes left, place the lotus root on the baking tray, tossed in olive oil (not included in the recipe) and sprinkled lightly with salt (not included in the recipe). Once cooked, leave on the baking tray to cool.
(5) Slice the pork into bite-sized pieces and place in a bowl with the lotus root (and pour over the cooking liquid). Add balsamic sauce to taste.
2. "One-Pan Teri Teri Chicken Char Siu" - Another plus point is that there's not much washing up to do
This unrolled chicken char siu is also recommended as a side dish. It's moist and juicy, and will make you want to eat rice.
The process is completed using just one frying pan, with the ingredients simply placed in the pan and marinated, then simmered, so another plus is that there's not much washing up to do.
[Ingredients] (Serves 2-3)
Chicken thigh...1 piece (350g)
White onion・・・10cm
Shiso leaves・・・2 pieces
A Soy sauce・・・2 tablespoons
A. Mirin...2 tablespoons
A sake・・・50ml
A Garlic (grated)...1 clove
A Five-spice powder (if available)...a little
A Honey... 1 tablespoon
Japanese mustard・・・appropriate amount
<How to make>
(1) Cut the white onion into thin diagonal slices. Cut the shiso leaves into thin strips. Place the white onion and shiso leaves in the same bowl and soak in water.
(2) Trim off excess fat from the chicken thighs, and cut into the thickest parts with a knife to make the thickness even.
(3) Without turning on the heat, place the meat skin side down in a frying pan, add A and leave for about 20 minutes.
(4) Place (3) on medium heat. Once boiling, reduce heat to very low, cover with a drop lid, and simmer for 12 minutes (turn over halfway through).
(5) Once the meat is cooked, place it on a plate.
(6) Place a frying pan over medium heat and simmer the sauce. Once it thickens, turn off the heat and add the meat from (5) back in and mix well.
(7) Cut the meat into bite-sized pieces and place in a bowl. Pour the reduced sauce over the top. Top with drained white onions and shiso leaves, and garnish with Japanese mustard.
Of course, you can use white onions as well. If that's too difficult for you, you can slice them diagonally and soak them in water as in this recipe.
This is a simple yet luxurious recipe, so please make use of it. (Text by Ayumi Nakaganji)
