Hello. I am Ayumi Nakaganji, a chef.

Every month we introduce a recipe for fried chicken. This time, we'll be introducing "Taiwanese-style fried chicken" using spices. It's the huge fried chicken that's so big you can cover your face, and is popular at night markets in Taiwan.

Don't think that fried chicken is a bit too much in this lingering summer heat... Hot, crunchy, fragrant with spices, wild fried chicken is best friends with beer!

1: The size and crunchy texture will get you excited! Spicy Taiwanese fried chicken "Da Ji Pai"

This is a crunchy Taiwanese-style fried chicken made with five-spice powder, a common spice mix in China that is a blend of five types of spice, including star anise, cloves, cinnamon, and Sichuan pepper.

Even if you have bought five-spice powder before, you probably have a lot of leftovers. Just adding a little to the fried chicken you usually make can really transform it into something a little different.

Darjeeling Pie Recipe

[Ingredients] (Serves 2-3)
Chicken breast...1 piece (300g)
A Garlic (grated)・・・1 tsp
A Ginger (grated)・・・1 teaspoon
A Sake・・・1 tablespoon
A Sugar・・・1/2 tablespoon
A Soy sauce・・・1/2 tablespoon
A Five-spice powder... 1 teaspoon
A. White pepper...a little
A Salt・・・1/2 teaspoon
B Flour... 5 tablespoons
B. Mayonnaise... 1 tablespoon
B Water... 4 tablespoons
C. Potato starch...3 tablespoons
C. Shiratamako flour... 4 tablespoons
Frying oil...appropriate amount

<How to make>

(1) Remove the skin from the chicken, lay the knife flat and make a cut down the middle to make it into a double-door type cut, so that the thickness is even.

(2) Cover the chicken with plastic wrap and pound it with a rolling pin until it is about 1 cm thick (it will shrink and thicken when fried, so make it thinner), then cut it in half.

(3) Place the mixture in a tray or other container and coat both sides of the chicken in it. Cover the chicken tightly with plastic wrap and leave it at room temperature for about 15 minutes to let the flavors blend.

(4) Mix B in a bowl. Mix C in a separate bowl.

(5) Lightly pat the chicken (3) dry with kitchen paper and mix with B. Cover firmly with C and deep fry in 170℃ oil over medium heat for about 7 minutes (try not to touch while frying).

(6) Increase the heat and fry for another 2 to 3 minutes until the outside is crisp and golden brown, then remove from the heat and drain well.

(7) Sprinkle salt and black pepper (both not included in the recipe) on top.

At first, the batter will come off easily, so fry slowly without touching it. You can also add sweet chili sauce to taste.

You can eat it as is, or cut it with scissors and share it!

2: An ethnic side dish that goes well with fried chicken: "Refreshing tossed green beans"

It's a slightly ethnic-style side dish with a nice texture and a sour taste. Another great thing about it is that it can be made with just a few ingredients.

[Ingredients] (Serves 2)
Kidney beans・・・100g
A. Sudachi juice... 1 tablespoon (any citrus juice will do)
A Sugar...1/2 teaspoon
A. Fish sauce・・・1 teaspoon
Dried shrimp・・・3g
White sesame seeds... 1 teaspoon

<How to make>

(1) Boil water in a pot (not included in the recipe), add salt (not included in the recipe), and boil the kidney beans for about 1 minute. Drain in a colander and let cool.

(2) Cut the kidney beans diagonally into 8 mm pieces. Place in a bowl and mix with A.

(3) Dry roast the dried shrimp and white sesame seeds to bring out their aroma.

(4) Add (3) to (2) and mix quickly.

The roasted shrimp and white sesame seeds add a nice aroma, so don't skip this step. You can use any citrus fruit, such as lemon, lime, or kabosu.
