The scorching heat continues day after day... When you feel tired, don't you crave something sour?

This time, we will introduce you to a "spicy black vinegar sauce" that is perfect for such occasions.

"Black vinegar" has a longer fermentation period than regular grain vinegar, so it has a mellow, umami-filled taste with a less sharp sour taste. However, it seems that many people buy it and end up with leftovers that they can't use up.

If you're thinking, "Oh, that reminds me, I haven't used up all of it!" then try using it in this recipe this summer.

Extremely versatile! "Spicy black vinegar sauce"

It can be used as a chilled tofu dressing, salad dressing, steamed chicken or fish, boiled pork, or mixed into noodles! It's a versatile sauce with a refreshing taste that is easy to use.

Spicy sauce

[Ingredients] (easy to make amount)
A White onion (finely chopped)・・・1/2
A Ginger (chopped)・・・1 tablespoon
A Garlic (minced)・・・1 tablespoon
B Black vinegar・・・4 tablespoons
B Chili oil・・・1 to 1.5 tablespoons
B Soy sauce...3 tablespoons
B Sugar・・・1/2 tablespoon
B. Miso... 1 tablespoon
Sesame oil...2 tablespoons
Sichuan pepper (powder)・・・1/3 teaspoon
White pepper...1/4 teaspoon

<How to make>

(1) Put ingredients B in a bowl and mix.

(2) Add sesame oil to a frying pan and fry A. When the aroma comes out, add (1) and bring to a boil.

(3) Turn off the heat, place in a clean storage container, add the Sichuan peppercorns and white pepper, and mix.

Please eat it within a week. If you don't like spicy food, reduce the amount of chili oil and increase the amount of sesame oil.

If you have a manual chopper, you can add white onion, garlic, and ginger together and chop them finely - it's super easy!

Usage 1: Ground sesame is the key "Simple chilled noodles with spicy black vinegar sauce"

These cold noodles can be eaten in no time even on a hot day. Ground sesame seeds are a nice accent. Add plenty of them and mix well before eating.

[Ingredients] (1 serving)
Chinese noodles...1 serving
Steamed chicken (boiled chicken, salad chicken, etc. are also acceptable)・・・50g
Cucumber・・・1/2
1/2 stalk of Japanese ginger
White onion・・・5cm
Spicy black vinegar sauce...appropriate amount
Ground sesame seeds... 1 tablespoon

<How to make>

(1) Thinly slice the white onion diagonally and soak in water. Thinly slice the Japanese ginger and soak in water. Cut the cucumber in half, remove the seeds with a spoon, and thinly slice diagonally. Cut the steamed chicken into bite-sized pieces.

(2) Boil water and boil the noodles according to the package directions, then transfer to cold water and rinse with ice water. Drain thoroughly.

(3) Place the noodles in a bowl and sprinkle ground sesame seeds all over. Add the chicken, cucumber, drained white onion and myoga ginger, pour the spicy black vinegar sauce over them, mix well and eat.

For one serving, we recommend using about 1/3 of the amount of spicy black vinegar sauce made in the recipe above.

Usage 2: "Chinese-style chilled tofu with spicy black vinegar sauce and pickled mustard greens" is also a great summer snack.

In the summer, these dishes taste really good. The flavors of dried shrimp and sesame go really well with the sauce.

Chilled tofu

[Ingredients] (1 serving)
Tofu・・・1/4 block
Dried shrimp... appropriate amount
Condiments (green onions, white onions, shiso leaves, etc.) - appropriate amount
White sesame seeds... appropriate amount
Spicy black vinegar sauce...appropriate amount

<How to make>

(1) Wrap the tofu in paper and leave it for about 5 minutes to remove excess water. Cut the condiments and soak in water.

(2) Place the tofu in a bowl and top with the drained condiments, dried shrimp, and white sesame seeds. Pour the spicy black vinegar sauce on top.

Although you may think "again?", cold tofu is an indispensable side dish in the summer that doesn't require cooking. You can eat it without getting bored by changing the sauce and toppings. In addition to the recipe, you can also add chopped pickled mustard greens or dried small sardines to enjoy it in various arrangements.

The amino acids and citric acid contained in black vinegar are said to help increase stamina and recover from fatigue (※1).
