How are you feeling? The heatwaves have been so intense I wonder what's going on... I want to drink lots of fluids and be careful not to get heatstroke.
This time, I'd like to introduce you to a recipe using tomatoes.
Tomatoes are high in water and minerals such as potassium, calcium, and magnesium, which are easily washed away by sweat, making them the perfect food for this season when we sweat a lot. (*1)
Furthermore, it has the effect of cooling down the body when it is heated up by the heat and stimulating the appetite, making it perfect for preventing summer fatigue.
1: A refreshing tomato sauce perfect for summer: "Fresh tomato sauce and sauteed white fish"
The cooking process is very simple and not difficult at all. This is a quick and stylish main dish to make in this delicious season of tomatoes and basil.
[Ingredients] (Serves 2)
White fish (I used grunt this time)・・・300g (boneless)
Tomatoes (mini, midi, etc.) - 200g
Salt...1/2 teaspoon
White pepper... appropriate amount
A Fresh basil (chopped)...8 leaves
A Garlic (grated)...a little
A Salt・・・1/3 teaspoon
A Sugar... 2 pinches
A Black pepper... appropriate amount
White wine... 1 tablespoon
Olive oil...1 tablespoon
Butter...15g
Flour...appropriate amount
<How to make>
(1) Sprinkle salt on the surface of the white fish and leave it for about 10 minutes, then wipe off any excess water with paper towels. Sprinkle with white pepper.
(2) Roughly chop the tomatoes, place in a bowl and marinate in A (you can include the seeds).
(3) Sprinkle flour on the surface of (1).
(4) Add butter and olive oil to a frying pan and heat over medium heat. Fry (3) skin-side down.
(5) Once both sides are browned, pour in the white wine, cover and steam over low heat.
(6) Place (2) in a serving dish and top with (5). Sprinkle with black pepper (not included in the recipe) and olive oil (not included in the recipe).
2. Sea Bream Carpaccio with Tomato Sauce: Perfect with Chilled Tomato Sauce
For those who are tired of regular carpaccio. The fresh tomato sauce is perfect for hot days! Serve ice-cold and it's also recommended as a dish to treat guests.
[Ingredients] (Serves 2-3)
Sea bream sashimi (pack)・・・70g
Tomatoes (mini, midi, etc.)...100g
A. Salt... a pinch
A Garlic (grated)...a little
A Cumin (powder)... a pinch
Parsley (chopped) - appropriate amount
Olive oil... a moderate amount
Black pepper...appropriate amount
<How to make>
(1) Lightly sprinkle salt on the surface of the sea bream and leave it for about 10 minutes. Remove any excess water with paper towels. *If you are not going to eat it right away, you can also salt it, wrap it in paper towels, then wrap it in plastic wrap, and store it in the refrigerator.
(2) Blend the tomatoes using a blender or a manual chopper, then add A to make a sauce.
(3) Cut (1) into thin slices.
(4) Place the sauce from (2) in a bowl and arrange (3) on top.
(5) Cover with plastic wrap and chill in the refrigerator.
(6) Just before serving, remove from the refrigerator and garnish with parsley, black pepper, and olive oil.
It is recommended to use tomatoes that are as sweet and tasty as possible. You can also wash cherry tomatoes, remove the stems, freeze them, and then blend them in the blender to make a sauce.
