In fact, strained yogurt can be used as a healthy substitute for mayonnaise and cream cheese. By draining the water, it becomes a thick and rich paste, which is light to eat and rather delicious. Don't underestimate it as a substitute!

1. "Eating Tartar Sauce" - Light and filling
This tartar sauce is full of ingredients and has a crunchy texture. By reducing the amount of mayonnaise and adding strained yogurt, it has a light and refreshing finish.
[Ingredients] (easy to make amount (serves 3-4))
Boiled egg...1
Onion・・・60g
Scallions・・・20g
Pickled cucumber (chopped)・・・20g
Mayonnaise...70g
Yogurt (drained)・・・30g
White pepper...a little
Salt...appropriate amount
Parsley (chopped)...2 tablespoons
Black pepper...a little
<How to make>
(1) Finely chop the onion and rinse it in water to remove the spiciness. Squeeze out all the water. Finely chop the shallots.
(2) Mash the boiled eggs in a bowl, add all the ingredients except salt, and mix together.
(3) Season with salt and sprinkle with black pepper.
In addition to parsley, herbs such as dill also go well with this tartar sauce. You can pour a lot of it on without feeling guilty. I recommend using pickled radishes that are a little sour.
This time, I received a large amount of grunt fish from someone who had just returned from fishing the other day, so I used some of the fish that I had frozen and coated in batter. Lime also goes really well with it.
Fried fish such as horse mackerel will taste delicious if you season the fries themselves with plenty of salt and pepper.
2. Creamy like cheese: "Green beans with mentaiko and yogurt"
Green beans are in season from June to September. To enjoy their pleasant crunch, be careful not to overcook them. The contrast in color between the beans and the batter is beautiful, and the firm texture of the beans goes well with the creamy taste.
[Ingredients] (Serves 2)
Beans...12 to 15
Onion (medium)・・・1/4
A Spicy Fish Eggs (skin removed)...20g
A Yogurt (drained)...1.5 tablespoons
A Mayonnaise...1.5 tablespoons
A Consomme (granules)... a pinch
Salt and pepper...a little
<How to make>
(1) Thinly slice the onion, spread it out, and leave it for about 10 minutes to remove the spiciness (if it is too spicy, soak it in water and squeeze out the water).
(2) Add salt (not included in the recipe) to boiling water and boil the whole beans for 1 to 2 minutes. Drain in a colander and fan to cool (do not drain into water).
(3) Once the beans have cooled, wipe off the moisture with paper towel and cut them diagonally into 3 or 4 equal pieces.
(4) Mix A in a bowl, add the green beans and mix.
(5) Season with salt and pepper.
This dressing can also be used with vegetables with low moisture content, such as lotus root, potatoes, and okra.
