[Yakuin Ramen Lunch] A popular non-pork-bone ramen! A specialty store for "Tai Soba" with a rich, addictive flavor (Chuo Ward, Fukuoka City)
Hello. I'm Yuri-chan, who moved to Fukuoka two years ago and has completely fallen in love with Kyushu food.
This time, we will introduce a new type of ramen restaurant located in Yakuin, Chuo-ku, Fukuoka City.
Iso Labo, a restaurant specializing in tai soba and tai chazuke (sea bream soba noodles and sea bream chazuke), located near Yakuin Station and offering excellent access! (Yakuin, Chuo Ward, Fukuoka City)
"Taisoba and Chazuke Iso LABO" is located a 3-minute walk from Yakuin Station on the Nanakuma Subway Line.
Originally, the restaurant operated as "Kaisendon & Chazuke Isoragi" in the "Kuuten" restaurant area of JR Hakata City, but moved to Yakuin, changed its name, and reopened in April 2021.
This restaurant specializes in sea bream soba and sea bream chazuke, and was established with the desire to allow many people to enjoy delicious fish in an easy and satisfying way.
The golden-colored soup, the key to "Tai Soba," is free of chemical seasonings and food additives. It is made with natural ingredients such as flying fish from Nagasaki, donko shiitake mushrooms from Miyazaki, Rishiri kelp from Hokkaido, bonito flakes from Ehime, domestic niboshi, and "Miyabi Tai" from Amakusa, Kumamoto. The soup is painstakingly prepared to condense the flavor of the sea bream.
It is paired with fragrant whole wheat noodles, the result of repeated trial and error at the request of Aoki Shokusan, a long-established noodle manufacturer in Fukuoka.
You can choose from two types of noodles: "Salt Sea Bream Soba" (880 yen), which uses natural salt from Oshima, Munakata City, and "Soy Sauce Sea Bream Soba" (880 yen), which is made with a blend of three original types of soy sauce.
Another popular dish, "Tai Chazuke" (980 yen), also uses "Miyabi Tai". After tasting the fresh sashimi, you can enjoy the ochazuke with the original sesame sauce and flying fish broth. You can enjoy this dish three times.
The interior of the store was clean and spacious, making it a welcoming place for families with children.
At lunchtime, you purchase a ticket from the ticket machine and then take a seat.
In the evening, you can order from the table. They also have a menu of snacks such as "Miyabi Sea Bream Marinade" (780 yen) and "Sea Bream Croquette" (580 yen), and you can enjoy a light drink with their wide selection of alcoholic drinks, including sake.

This time I ordered the "Iso Labo Set" (1,000 yen). It comes with either "Salted Sea Bream Soba" or "Soy Sauce Sea Bream Soba" and "Taimeshi" (single item price 320 yen), which is rice cooked with Miyabi Tai.
This is the "Iso LABO Set" with "Salted Sea Bream Soba".
When it comes to salt ramen, thin noodles are common, but the noodles at this restaurant are neither too thin nor too thick, and are chewy and have just the right amount of firmness.
The soup is beautifully clear. I imagined it would have a light taste, but when I actually tasted it, contrary to what it looked like, it had a strong salty and fatty flavor that was just as strong as the noodles.
The secret to its deliciousness is that they use "Oshima Salt" from Munakata, which is cooked the way it is traditionally done.
The toppings include roasted chicken breast, shredded sea bream, spinach, and green laver, all of which enhance the flavor of the soup.
Once you've eaten about half of it, try adding the yuzu pepper that comes with it to change up the flavor. It will completely change the impression.
Finally, pour the remaining soup over the "Taimeshi" to make it like Ochazuke.
The sea bream rice has a light flavor on its own, but the addition of the salt-based sea bream soup with yuzu pepper doubles the flavor.
It was a wonderful set menu, with the remaining soup being added to the sea bream rice being carefully planned.
And this is the "Iso LABO Set" which includes "Soy Sauce Sea Bream Soba".
The topping for the "Shoyu Tai Soba" is roasted pork char siu. It's soft and delicious!
The rich, deep, sweet soup has a wide range of flavors when you add yuzu pepper, which makes you grin without even realizing it. The yuzu aroma and spicy taste are addictive. It goes well with sea bream rice.
Although it was simple, it was a luxurious drink that left me thinking "delicious!" from start to finish.
