Crispy batter and rich flavor! "It's so delicious you can make it at home♡" A delicious fried chicken recipe that will keep you drinking beer
Hello. I am Ayumi Nakaganji, a chef.
Everyone loves fried chicken. There are many different types of fried chicken, so last month I decided to introduce one recipe each month. This time, I'm introducing fried chicken made with bone-in chicken.
I've heard that meat around the bone is the tastiest, and I really think that's true! It's also easy to pick up and eat with your fingers, so it's great for school sports day lunches and snacks.
And as a side dish, we'd like to introduce some crunchy cucumbers, which are perfect for the coming season.
1. "Crispy Fried Chicken Spare Ribs" - A strong flavor that goes well with alcohol
Deep-fried chicken wings are packed with flavor and are exceptionally delicious. They are coated in a thick batter for a crispy finish. Oyster sauce is added to give them a strong flavor.
[Ingredients] (Serves 2-3)
Chicken wings・・・300g
A Garlic (grated)・・・1 tsp
A Ginger (grated)・・・1 teaspoon
A Soy sauce・・・2 teaspoons
A Oyster sauce・・・1/2 tablespoon
A Sugar・・・1/2 teaspoon
A Sake・・・1 tablespoon
A Black pepper... appropriate amount
Potato starch... appropriate amount
Frying oil...appropriate amount
<How to make>
(1) Put the chicken wings and ingredients A into a plastic bag and rub together. Remove the air and leave for at least 10 minutes (if you put it in the refrigerator, return it to room temperature before frying).
(2) Remove any excess liquid from the plastic bag, add potato starch and thoroughly coat the chicken wings. Press any crumbly batter firmly into the chicken.
(3) Add about 1cm of oil to a frying pan and heat over medium heat. Place (2) in the frying pan and fry on both sides (the batter will come off, so do not touch it too much until it has set).
(4) After frying for 4 to 5 minutes, remove from the oil and let sit for 1 minute. In the meantime, raise the temperature of the oil, put the chicken wings back in and fry for a second time.
(5) When the surface becomes crispy, remove it from the oven.
The temperature is going to rise soon. Deep frying can be quite a hassle, but this freshly fried food with a cold beer is something special!
2: A great accompaniment to fried chicken! Simple lightly pickled "crunchy cucumber"
Pickled cucumbers are a great thing to have in your fridge this coming season. They go great with fried foods and are refreshing. You won't be able to stop eating them because of their crispy texture! Of course, you can eat them as they are, but if you add bonito flakes, sesame oil or sesame seeds, they make a great dish. They are also very convenient when you feel like you don't have enough side dishes.
[Ingredients] (easy to make amount)
Cucumber・・・2 pieces (about 200g)
A Water・・・200ml
A Dashi kelp・・・5×5cm
A Salt・・・1/2 tablespoon
A Takanotsume...1 to 2 pieces
A Garlic (grated)...a little
<How to make>
(1) Peel the cucumber vertically in several places with a peeler and cut into 1.5 cm slices. Fold the cucumber in half and remove the seeds.
(2) Place the cucumber and seasonings (A) in a plastic bag and leave in the refrigerator for at least half a day.
Salt water is thought of as being thinner than seawater, and the amount of salt to water is roughly 3%.
You can also slice them thinly, drain them thoroughly, and add them to a potato salad. Eat them within about 5 days.
