Just marinate and bake! A new recipe for easy, juicy grilled chicken and egg side dishes

Hello. I am Ayumi Nakaganji, a chef.

I decided to clean up my kitchen over the holidays, so I started tidying up various things...but even though I thought I had a pretty good idea of what was there, I ended up finding the same condiments and two opened bags of sesame seeds, and I'm now regretting it.

Do you have spices lying around somewhere in your kitchen? You bought them with the intention of using them, but you don't know what to do with them, and you don't even remember when you bought them.

This time, we will introduce a simple recipe that just requires marinating and baking, which may be a lifesaver for such spices, as well as a useful side dish that goes perfectly with it.

1: Just marinate and grill on a fish grill! "Harissa-grilled Chicken" with a fragrant spice flavor

Harissa is a spicy paste-like seasoning that originated in North Africa. It has become popular recently and can now be found in local import food stores. It is a seasoning made by mixing multiple spices based on chili peppers and paprika, but this time we will recreate it using spices that are easy to find (and likely to be found at home).

Rub it into chicken thighs and grill it until crispy and juicy, making a perfect snack. Onion garnish is also a great match!

Harissa bake recipe

Ingredients (for 2 people)
Chicken thigh...1 piece (350g)
A. Salt...just under 1 teaspoon
A Garlic (grated)・・・1 tsp
A Chili powder... 1 teaspoon
A Coriander powder・・・1/2 teaspoon
A Cayenne pepper・・・1/3 teaspoon (if you don't mind the heat)
※If not available, finely chop takanotsume (1 piece)
A Olive oil...1/2 tablespoon

<How to make>

(1) Remove excess yellow fat from the chicken thighs and poke holes evenly into the skin with a fork.

(2) Add the chicken and ingredients (A) to a plastic bag, knead, remove the air, and let rest in the refrigerator for at least 30 minutes.

(3) Bring the meat to room temperature and grill it on both sides on a fish grill.

(4) Cut into bite-sized pieces and place in a bowl.

Add salt in an amount roughly equal to 1.2% of the weight of the meat. If the skin is about to burn, brush some oil on the surface to prevent it from burning.

The "chili powder" used this time is a mixed spice containing paprika, cumin, oregano, etc. This is a recommended recipe for those who don't know how to use it. It's also great sprinkled on French fries.

After (2), you can also coat this marinated chicken in potato starch and deep fry it, which is delicious!

Other than chili powder, other spices that you can’t use up can be added to the powder when deep frying, such as cumin, allspice, five-spice powder, coriander, and garam masala.

2: It's nice to have it! A simple, everyday dish: "Sweet and sour pickled new onions"

This side dish uses new onions, which are less spicy and have a delicious sweetness. It's also recommended to prepare it in advance. Try making it together with "Harissa-grilled Chicken"!

New onion sweet and sour

[Ingredients] (easy to make amount)
New onion...1 (about 180g)
A Rice vinegar (or grain vinegar) ... 3 tablespoons
A Sugar... 1.5 tablespoons
A Salt・・・1/3 teaspoon

<How to make>

(1) Cut the spring onions into thin slices 3 mm wide (slightly thicker slices) and spread them out on a baking tray.

(2) Mix A well, pour it over the onions, and let it sit for at least an hour. Turn it over halfway through to make sure it is well mixed.

It can be stored in the refrigerator for about a week. It's delicious to eat as is, but it's also great as a side dish for curry, on top of grilled meat, or as a marinade with octopus... it's a great side dish to have on hand.

Recipe using "Sweet and sour pickled new onions": "Tomato marinade with new onions and dried small sardines"

Add plenty of parsley to "pickled new onions in sweet vinegar" for a refreshing marinade. Also recommended as a palate cleanser or wine snack.

Fresh egg marinade

[Ingredients] (Serves 2-3)
New onions pickled in sweet vinegar...all
Dried small sardines...two pinches
Tomato...1/2
Parsley (chopped)...2 tablespoons
Olive oil...1 tablespoon
Black pepper...appropriate amount

<How to make>

(1) Cut the tomatoes into bite-sized pieces and arrange them on a plate.

(2) Marinate the ingredients except for the tomatoes and place on (1).

It's a refreshing side dish that goes well with fatty meats like chicken thighs and pork belly.
